Spaghetti alla carrettiera is a pasta recipe originating in the Platani Valley, nowadays much more typical in eastern Sicily. It is usually made with spaghetti, garlic, chili pepper, pecorino siciliano or breadcrumbs, parsley and olive oil for dressing, and typically tomato is included. Occasionally additional ingredients such as anchovies, capers, almonds or ache nuts and gewurztraminer are additionally included. The dental tradition is that pastas alla carrettiera originated with carters who brought the meal prepared ahead of time, on their wagons for lunch.
